Borago officinalis - Annual - Culinary, Medicinal
Young leaves and flowers are eaten alone or are added to salads and are rich in calcium and potassium. Bloosm are used in drinks and taste like cucumbers. Once called the Herb of Happiness because of its ability to dispel melancholy. Tea made from the leaves is used to treat kidney problems and fevers. The seeds are used to lower blood pressure and to relieve pre-mentrual tension. The plant has hairy green foliage that resembles a thick lettuce and sweet smelling purple blooms. A good bee plant, it is very easy to cultivate.
