Used most often to flavor baked goods and liqueurs (such as anisette, ouzo, and pernod). The entire plant has a strong licorice scent. Leaves have been chewed as a breath freshener, or are eaten raw or cooked in salads, stews, and puddings. Seeds are used to flavor soups, pies and cakes and are said to improve digestion. Medicinally, anise is used as a digestive tonic and to treat respiratory problems. It is antispasmodic and an expectorant and is sometimes used externally by new mothers to stimulate the production of milk. The plant is an annual, growing to 18in. in height. Prefers full sun or partial shade.
